Well this morning I was in the mood for something that was fried and cheesy, like an enchilada. So, my mind lit up on this idea. Warm corn tortillas stuffed with boiled potato and cheese, fried and sprinkled with seasoning salt and garlic powder.
Warning- These are addicting and a medium sizes pan can fit about 5 at a time.
Ingredients:
-Corn tortillas
-Monterey or Pepper jack cheese cut into thin slices or sticks or shredded
- garlic powder and seasoning salt
- oil
Warm the tortillas in the microwave in a plastic Baggie while heating oil over medium heat in a good non stick pan. Take your boiled potato and slice in half length wise, cutting thin spears. When your tortillas are warm, place a spear and a slice of cheese, creating a taco like version, which you lay flat side down on the pan.
Repeat until your pan is full. Sprinkles seasoning salt to your liking on one side while they are frying and add a little more oil to the tops to avoid the tortilla curling upwards.
Fry about 5 min until golden brown and flip. Sprinkle garlic powder on the top of the up side. Fry another 5 min. They should be golden brown, with the cheese just beginning to ooze out the sides.
Enjoy by themselves or dunked into a fried egg yolk.
